Cajun Spice Pork Tenderloin
I'll start my Camping Blog off with a family favorite!
Depending on if we're just heading out for a weekend or a week, I'll determine what I "do ahead" for this recipe.
Ingredients for the rub:
2 tsp paprika
2 tsp dried oregano
2 tsp pepper
2 tsp ground cumin
1/2 to 1 tsp cayenne peppa
2 tsp salt
4 cloves garlic
If you are ONLY making the rub at this point, mix together all ingredients except for the garlic. Seal in an airtight container and pack, throwing your head of garlic in the camper separately.
Final ingredient ~ 2 pork tenderloins, about 1 1/2 lbs. total.
So, what's your timing??
Are you just going for a weekend? Then, I like to mix all of the rub ingredients together ~ including the garlic and rub the pork before I even pack the food in the trailer. I put it in a big Ziploc and put it in the fridge.
If you're going for a whole week and won't be making this until a few days later, then keep the garlic separate and pack all separately. When you're ready to rub, cut up your garlic and mix it into the dry ingredients and RUB YOUR MEAT! Let it marinate in a fridge or cooler for 1 to 24 hours ~ I like to do it for 24 hours, if possible, it really gets those seasonings into the meat.
When you're ready to eat, I like to bring my meat down to more of a room temp before I cook, not too long. Then, grill it over medium-high heat for 20-25 minutes, turning regularly. When it's done, let it rest under foil for a few minutes. Cut, serve & thoroughly enjoy!!!
This should serve about 4 people (I have 4 people, growing boys, and usually even have a couple pieces leftover for lunch the next day).
What do I serve with this??? Good thing you asked. Hoping that will be my next post! I love a cucumber dill salad with this - really cools off the spicy-ness of this dish :-)
